Brew It Cold: Tech That Chills
Evaluating consumer perceptions of cold brewing technologies
The Challenge
As cold coffee continues to grow in popularity, our client developed three new cold brewing technologies for at-home use, each with different benefits and tradeoffs. But how would consumers respond to them?
The objective was to understand:
- How each technology impacts the overall consumer experience
- The tradeoffs consumers are willing to make for a cold beverage
- Which system offers the best balance of temperature satisfaction, brewing ease, space, and maintenance
We sought to uncover which solution best aligns with consumer needs — not just functionally, but emotionally and behaviorally.
My Role
As Research Lead, I was responsible for:
- Designing the interview protocol and testing materials
- Overseeing participant recruitment and scheduling
- Facilitating and analyzing consumer interviews
- Delivering actionable insights to guide product development and positioning
Approach & Methods
- Current Routine Assessment
Participants walked through their existing cold coffee routines. We captured details about:
- Tools and ingredients used
- Time investment and prep process
- Satisfaction with flavor, strength, and temperature
- Out-of-Home Behaviors
Participants described their out-of-home cold coffee habits (e.g., cafés, drive-thrus) and evaluated how these experiences compared to what they could achieve at home.
- Technology Evaluation (Counterbalanced)
Each participant evaluated three cold brewing technologies in randomized order. For each, they:
- Sampled the beverage
- Reviewed brewer designs and footprints
- Rated brewing time, temperature, strength, flavor, noise, and maintenance
All product names were masked to ensure unbiased feedback.
- Final Tradeoff Discussion
To close, we asked participants to select their preferred technology and explain their reasoning. This exposed how users prioritize features, and what they’re willing to sacrifice to achieve their ideal experience.

Clear Tradeoff Preferences
The research highlighted how consumers rationalize tradeoffs:
- Some value compactness and affordability
- Others prioritize strength, coldness, and consistency
These personas helped guide product positioning and feature prioritization.
Informed Product Roadmap
Findings were used to:
- Define preferred product attributes for different market segments
- Refine brewer design concepts
- Inform pricing and feature-bundling decisions
Reflection
This study reinforced that product success is about more than just specs, it’s about understanding what people are willing to give up to get what they truly value. By walking consumers through the entire brewing experience, we uncovered both rational and emotional factors that shape product preference. These holistic insights are now helping shape a more nuanced, consumer-informed roadmap for cold coffee innovation.
